Training “The basics of wine making”

On January 25 and 26, the Association of Vignerons de Normandie, in collaboration with the Chamber of Agriculture, offered training “The basics of wine making” in Lisieux.
Karïn Pasquet, consulting oenologist at the Gironde Chamber of Agriculture, came to present to us the different vinification processes for white, rosé and red wines, from harvest to aging.

We thus discussed the quality and maturity of the grapes, the analyzes to be carried out throughout the vinification process, the management of fermentations, maceration, the protection of the wine with SO2 and its alternatives, aging, hygiene in the cellar and some regulatory points.

Two very enriching days in terms of information but also exchanges between participants.
